I'm not going to pretend my kids are amazing vegetable eaters, but we are on a good veggie patch of late. Some of it has to do with the novelty of our weekly CSA pickup.
And part of it has to do with the deliciousness that is olive oil, sea salt, and kale. Roast until crunchy and eat by the handful. I've even gotten away with barely roasting it (so it's not so much crunchy as kind of soggy/chewy) and they'll still eat it. I've even given it to them when it's just a little burned and awfully bitter.
I honestly can't keep the kids in the amount of kale they demand. We plan special trips to the Swarthmore Farmer's Market just to get more kale. (And scallions - we can't ever have enough scallions!)
